Steam oven accessories owners actually use

Most steam ovens ship with one tray and a water tank. These are the 30 things owners add, chosen from what the manuals call for, what our recipes need, and what fixes the common error codes. Each listing was opened and checked before it went on this page.

If you only buy three

  1. The descaler your manual names. Of the 172 fault codes we transcribed from manufacturer manuals, the owner-fixable ones are mostly water and scale. See the error codes.
  2. A perforated steam pan. It is what the steam programs assume you are using.
  3. An instant-read thermometer. Steam overcooks fish and chicken quietly. A thermometer stops that while you learn the oven.

Steam Oven Baking

The best-reviewed cookbook written specifically for combi steam ovens: 25 sweet recipes with the steam settings worked out for you. If you own a combi steam oven and want one book, start here.

Descaling and cleaning

Scale is behind most of the owner-fixable error codes in steam oven manuals. The manuals disagree on how to deal with it, so check yours first: Miele and Thermador name their own descalers, Bertazzoni forbids vinegar, and Anova allows any descaling liquid. Water type differs too. Anova asks for distilled water; Miele, Thermador, Smeg, Wolf and Sharp say the water needs minerals.

Durgol Swiss Steamer descaler

A general-purpose steam-oven descaler, for ovens whose manual allows a generic one (Anova says any descaling liquid works). Miele and Thermador name their own descalers; use those instead.

Miele descaling tablets

The tablets Miele's own descale program expects. Clears the F20 message on DGC combi-steam ovens.

View on Amazon · ~$22
ZeroWater 10-cup filter pitcher

Only for ovens whose manual asks for distilled or low-mineral water, such as the Anova Precision Oven. Do not use it for Miele, Thermador, Smeg, Wolf or Sharp ovens: their manuals say the water needs minerals.

Weiman stainless microfiber cloth

A soft, non-abrasive cloth for drying the door and cavity after a steam cycle. Every manual we checked rules out scouring pads and abrasive cleaners.

Steam pans

Most ovens ship with one pan. Miele's manual recommends perforated containers for steaming, with a solid one underneath for drippings, and says your own dishware must be oven-safe, withstand steam, and leave a gap below the oven ceiling. Measure your interior before buying.

Vollrath 1/3-size perforated steam pan, 4" deep

Miele's manual recommends perforated containers so steam reaches food from all sides. A 1/3 pan is about 12.75 x 6.9 in; check your oven's interior before buying.

Winco 1/3-size solid steam pan, 4" deep

For rice, grains, custards and anything that holds liquid. Set it under the perforated pan to catch drippings. Same 12.75 x 6.9 in footprint.

Nordic Ware quarter sheet with rack

A 9 x 13 in pan with a grid that keeps food above the drip. Fits inside the Anova Precision Oven; measure other ovens first.

Thermometers and scales

Steam cooks faster and more evenly than dry heat, which makes it easy to overshoot. An instant-read thermometer is the single best upgrade while you learn the oven.

TempPro instant-read thermometer

Steam cooks faster than you expect. A one-second probe stops you overcooking fish and chicken while you learn.

ThermoWorks Thermapen ONE

The reference instant-read. Worth it once you are using low-temperature steam and sous-vide modes.

Bread baking

Steam is why bakery crust is thin and crackly. These are the tools that let a home steam oven do it reliably.

Other books worth owning

Steam-oven cookbooks are thin on the ground, and most on Amazon are recent self-published titles with almost no reviews. These are established books on the things a steam oven does best: bread, dumplings and buns, and low-temperature cooking.

Everyday handling and storage

Steam burns through cloth mitts. And the best reheating habit is storing leftovers in glass you can put straight in the oven.

Before you buy

  • Measure the cavity. A 1/3-size steam pan is about 12.75 x 6.9 in and a quarter sheet about 9 x 13 in. Check those against your oven's interior and leave room above the pan for steam. Interior sizes are in each oven's manual in the Manual Library.
  • Use the descaler your manual names. Manuals disagree. Miele recommends its own tablets and warns that descalers containing acids other than citric acid could damage the oven, which rules out vinegar. Cuisinart's CSO-300 manual and Thermador's PODS301W manual both use vinegar for scale. Follow your own.
  • Do not assume distilled or filtered water is better. Miele's manual says distilled water could damage the oven, and that water needs a minimum conductivity for the fill-level sensor. Thermador and Smeg also say not to use distilled water, Wolf says not to connect a filtered supply, and Sharp asks for tap water. Anova and Suvie, by contrast, recommend distilled. Follow your own manual.
  • No abrasive cleaners inside the oven. Miele, Anova, Toshiba, Smeg, NuWave and Cuisinart all rule out abrasive or scouring cleaners. A soft cloth and the oven's own cleaning program are what the manuals ask for.
  • Stovetop steamers are not needed. Bamboo baskets and pot steamer inserts are made to sit over boiling water. In a steam oven the oven is the steamer: use a perforated pan, lined with parchment for dumplings.
